The top photo is from the now defunct restaurant(?) Kooki Sushi which uses a rice cookie base with chocolate nori. The roe is apricot jellies, the egg is lemon flavored white chocolate.
The second photo is from here. This uses Swiss Rolls (the little snack cakes) coated in frosting and coconut with fondant for most everything else. The California rolls are made using yogurt sticks for the filling!
The third is from Food Network with a rice crispy treat base, candy details and a cream cheese/pistachio wasabi.
